Color, nose and palate
The wine has a deep, bright, youthful red colour. The nose has a leafy, cedary aroma with notes of mulberry, black olives and herbs. The initial burst of blackcurrant aroma is followed by hints of fresh mint and tarragon. This is a wine of structure with long, fine grained tannins balancing the plush richness of fruit typical of the 2006 vintage. A magic combination of power and elegance that comes from a great vineyard site in a favourable year.
Food recommendation: Pairs well with grilled, roasted meat dishes, mushrooms or squash.
Cellaring potential: Will develop over 2 decades or more.

Clare Valley Cabernet Sauvignon is a hidden gem worthy of international recognition. Sevenhill Vineyard Cabernet Sauvignon has offered one of the best examples since 1976. Blessed with a climate that allows for a long ripening period, this wine impresses with every new release.
Despite the bottle age the Sevenhill always has a youthful spring in its step with the mouth coating fruit supported by fine tannin. The result is a long elegant and dry finish. This is far too easy to drink and the fact that it has been bottle aged allows you to enjoy it now. Sevenhill Vineyard Cabernet Sauvignon however has consistently proven to be a long ager, so further cellar time is well rewarded.
Vintage Notes:The 2006 vintage is rated as one of the best years in the Clare Valley. The season enjoyed near perfect growing conditions with temperatures in January & February being well below average.
Winemaking: Fermented mostly in small open tanks with hand plunging with a significant portion given extended maceration on skins for 40 days. Aged in small French oak barrels for 24 months then bottled without filtration.
