Color, nose and palate
A wine firmly in the ‘claret’ tradition. Picked quite early in the season to preserve the delicate fragrance of the cabernet grape. Released at 7 years of age the wine has a superb mature nose still showing some blackcurrant aromas but also cedary character of mature cabernet.
The palate has cabernet austerity, a fine dry palate and long lingering dry tannins. A wine to be enjoyed with food.
Food recommendation: Pairs well with grilled, roasted meat dishes, mushrooms or squash.
Cellaring potential: Will develop over 2 decades or more.
Out of stock
A welcome wet autumn and winter in 2007 was a great foundation for the spring/summer growing period. The fruit, although still extremely low yielding, enjoyed a relatively mild summer and was picked well before the notorious 2008 heat wave.
The Winemaking Fermented mostly in small open tanks with hand plunging with a significant portion given extended maceration on skins for 40 days. Aged in small French oak barrels for 24 months then bottled without filtration.
