Vintage in Australia takes place from early February to late April. Grapes in the warm to hot regions usually ripen and are harvested earlier than grapes from the cool to cold regions. Veraison is the term used to describe the stage at which the grapes begin to ripen. I.e. the hard green berry begins to soften, change colour and start increasing in sugar. The grapes are picked when they reach the level of ripeness suitable for the wine style to be made. The colour, flavour, tannin content, sugar and acid levels determine when the grapes are picked. The exact time of harvest is also influenced by other factors such as fruit condition, weather conditions and availability of labour.
