Color, nose and palate
The 2012 Watervale Riesling has a powerful, concentrated aromatic intensity showing lemon, lime and spring flowers on the nose. The palate is incredibly long, ultra dry but with a mouth filling, complex generosity of flavour.
Food recommendation: Wonderful with shellfish, the acidity of the wine also pairs well with oily fish such as salmon.
Cellaring potential: This wine has the line and length to age for a decade or more.

Winemaker’s comments
Made entirely from fruit grown in our vineyard at Watervale. This is a 50+ year old, dry grown vineyard, hand pruned and hand picked. No artificial fertilisers, pesticides or herbicides have been used in growing these grapes. The vineyard has had regular biodynamic sprays applied since 2005. The wine is made in a very traditional, low intervention style that we have used for the last 30 years. Hand harvested fruit treated very carefully in the winery with only free-run juice used. Fermented with indigenous yeasts.
