Color, nose and palate

 

A brilliant, pale colour with youthful green tinges. The nose is intense combining the lemon zest and snow pea of Semillon with the gooseberry and herbaceous aromas of cool climate Sauvignon Blanc. On the palate mouth-watering citrus fruits are balanced by hints of more tropical passion-fruit leading to a long and lingering finish of crisp grapefruit acidity.

Crisp and delicious in its youth, this wine will develop further complexity over 5 or so years.

Winemaker’s comments

The fruit for this wine was sourced from higher altitude vineyards in the cool climate coastal sub-regions of Denmark Western Australia – a blend of 54% Semillon and 46% Sauvignon Blanc. Only the finest, more pristine, “free-run” juice was used in the production of this wine resulting in a wine of outstanding elegance, free from harsh, phenolic character associated with grape skins. A third of each variety was barrel fermented in 500 litre French oak puncheons for 6 weeks and then blended back with the cool fermented tank portion, introducing a subtle, creamy texture and savoury complexity. Minimal fining and the use of screw caps are all further steps towards capturing the inherent delicacy of this cool climate blend.
