Color, nose and palate

 

Pale in colour with the slightest hint of lime, this lovely fresh, fruity wine shows aromas of jasmine, citrus blossom, green apple, pear, and passionfruit with background notes of snow pea and dried herbs. The mouth filling palate is smooth and very textural, being full of juicy fruit with subtle hints of herbs and spices with a long, fine, refreshing finish.

Cellaring potential:This style of wine works wonderfully well in Margaret River and under screw cap closure will drink well for at least 2 years.

Winemaker’s comments

The 2015 vintage was simply a stunning vintage. The summer was warm and sunny but not hot, with picking times about a week early due to a warm winter with bud-burst being quite early. The flavour profiles changed gradually so there was no rush during the harvest and acid levels stayed relatively high allowing for wines with ripe flavours but with lovely fine mineral acidity. The Sauvignon Blanc is grown on our southern Margaret River vineyard in Forest Grove while the Semillon comes from our Wilyabrup vineyard. This style of wine works wonderfully well in Margaret River and under screw cap closure will drink well for at least 2 years.

Picking Date:14th to 25th February 2015, being picked on a flower or a fruit day according to the biodynamic calendar
Yield: 5 – 7 t/Ha
Baumé: 11.1 – 12.0 Be°
Ferment: 100% stainless steel tank with a number of
batches with different yeast to aid in flavour diversity
Alcohol: 12.3 %
pH: 3.35 TA: 6.5g/L
