2016 Mitchell Semillon
Halliday 91/100
Wine & Spirits 91/100
Color, nose and palate
Pale green- gold in colour, the wine has a delicate spicy nose with citrus and lemony aromas. The palate is delicate but mouthfilling with extra weight and the fruit flavours are long and sustained.
Food recommendation: Creamy chicken dishes, seafood, or Asian cuisine.
Cellaring potential: Easily approachable when young and with 2-5 years cellaring develops butter and straw characters typical of high quality aged Semillon.

Description
Vintage Notes: A mild summer and perfect ripening condition resulted in a very early and short vintage. The majority of fruit being picked in the month of February. The mild conditions brought on excellent flavour development and great balance in the vineyards.
The Vineyards: Single sight vineyard in Watervale, planted in 1962. No irrigation, artificial fertilisers, pesticides or herbicides have been used in this vineyard.
The Winemaking The grapes were handpicked, destemmed, chilled and drained immediately. We reserve only the first free-run juice for the Semillon. The juice is then run into French oak barrels for fermentation with wild yeast and then aged on lees for 12 months.
